Mini Easter cheesecake baskets. Easy and fun to make, and yummy. Ingredients:
2 (8oz.) pkgs. cream cheese, softened |
1/2 c. sugar |
1/2 tsp. vanilla |
2 eggs |
12 vanilla wafers |
coconut, green food coloring, jelly beans, and licorice strips for decorating |
Directions:
1. Mix cream cheese, sugar, vanilla, and eggs together. 2. Place a vanilla wafer in bottoms of 12 paper-lined muffin cups. 3. Pour cream cheese mixture on top of wafers. 4. Bake at 350° for 20 min. or until centers are almost set. 5. Cool and refrigerate 2 hrs. or overnight. 6. Mix some coconut with a few drops of green food coloring. (Just keep stirring and tossing, and eventually it'll be green throughout.) Sprinkle cheesecake cups with green coconut and jelly beans just before serving. 7. Shape licorice to make basket handles. Makes 12. |
