This is typical of what is becoming known as East/West cuisine, the flavors and ingredients of Asia presented in a Western form. Each bite of these burgers packs a zesty wallop of flavor and texture. Good accompaniments are bland steamed rice or French bread, each of which balances these assertive flavors. Ingredients:
1 lb. lean ground pork |
3 garlic cloves, chopped |
2 green onions, chopped |
2 teaspoon soy sauce |
2 teaspoon peanut or other mild vegetable oil |
pinch of sugar |
a few drops tabasco sauce, or a pinch of cayenne pepper |
hoisin sauce |
large whole green lettuce leaves – romaine works well |
1/2 cup or so of roasted peanuts, coarsely ground |
a handful of cilantro, coarsely chopped |
Directions:
1. Mix meat with garlic, onions, soy sauce, peanut oil, sugar and Tabasco or cayenne. 2. Form into patties and grill until cooked through. 3. Serve each grilled patty spread with hoisin sauce, wrapped in a leaf of lettuce, sprinkled with peanuts and cilantro. 4. These are delicious exactly as described, however, you could spread the hoisin sauce inside a pita bread and insert the patties into it along with the lettuce for a more conventional burger experience. |
