8 cups vegetable stock |
1 1/2 cups dried lentils |
3/4 cup dried black-eyed peas |
3 medium tomatoes, chopped |
1/2 cup chopped carrot |
1/2 cup chopped celery |
1/2 cup chopped onion |
1 teaspoon minced garlic |
3/4 teaspoon dried thyme |
3/4 teaspoon dried oregano |
1 bay leaf |
salt and pepper |
Directions:
1. Combine all ingredients except salt and pepper in slow cooker. 2. Cover and cook on low 6-8 hours. 3. Discard bay leaf. Season to taste with salt and pepper. |
