Earl Grey Soaked Raisin Cake |

A fruit cake of British origin, taken from a Gourmet Traveller magazine. Ingredients:
2 cups strong earl grey tea, warmed |
180 g raisins |
170 g soft butter |
170 g brown sugar |
3 eggs, beaten |
285 g plain flour |
2 teaspoons baking powder |
Directions:
1. Combine tea and raisins, stand for 10 minutes. 2. Strain, reserve liquid. 3. Combine butter and sugar in pan and melt over a medium heat. 4. pour into large bowl and add 2 tblsp of reserved liquid. 5. Cool then add eggs, combine well. 6. Sift over flour, baking powder and a pinch of salt. 7. Stir through drained raisins. 8. Pour batter into well greased and floured 26 cm bundt tin. 9. Bake 180 F for 40 minutes. 10. Turn onto wire rack and cool. |
