A beginner's recipe. Ingredients:
2 1/2-5 lbs chicken |
4 tablespoons butter |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1 large onion, halved |
1/2 teaspoon sage |
1/2 cup water |
Directions:
1. Preheat oven to 325°F. 2. Remove giblets/neck from chicken cavities. 3. Rinse chicken and pat dry. 4. Rub softened butter all over chicken. 5. Sprinkle outside of chicken with salt and pepper. 6. Sprinkle 1/4 tsp salt and 1/2 tsp of sage inside the chicken. 7. Place onion inside chicken. 8. Place chicken in roasting pan breast side up. 9. Add 1/2 cup water to pan. 10. Loosely tent breast with aluminum foil. 11. Cook for 25 minutes per pound. 12. (3 lbs= approx 1 1/2 hours; 5 lbs= approx 2 1/2 hours). 13. Remove chicken to a warm platter and let rest for 15 min to distribute the juices. |
