Found this on the Guittard chocolate web site - they make the best chocolate chips! According to the site, pastry chef Roderic Reiswig serves this fondue at the Rose Pistola restaurant in San Francisco's North Beach (Little Italy). Serving size is a guess. Ingredients:
6 ounces e. guittard 72% cacao bittersweet chocolate, chopped |
6 ounces e. guittard 38% cacao milk chocolate, chopped |
1/2 cup heavy cream |
1/4 cup milk |
1/4 cup brandy |
Directions:
1. Melt all ingredients in a double broiler. 2. Serve with pretzels, cake, fruit or whatever else you like. |
