Dynamite Oatmeal Chocolate Chip Raisin Cookies

Ingredients:
1 cup unsalted butter, room temp
1 1/2 cups light brown sugar, firmly packed
1/2 cup white sugar
1 large egg
1 teaspoon vanilla
1 teaspoon butterscotch extract
1 teaspoon baking soda
1/8 teaspoon salt
1/4 teaspoon cinnamon
1 cup all-purpose flour
2 cups rolled oatmeal
1 cup golden raisin, plumped in water, then drained
1 1/2 cups chocolate chips
1/2 cup pecan pieces (optional)
Directions:
1. Cream the butter and the sugars, then add the eggs, vanilla and butterscotch extract.
2. Sift the baking soda, salt, cinnamon and flour together, then add in batches to the wet ingredients until mixed.
3. Add oatmeal, raisins, chips and pecan, if desired.
4. Drop by teaspoonfuls onto a lightly greased or parchment-lined cookie sheet.
5. Bake at 350° for 8-12 minutes or until golden brown.
