Oh this is so refreshing, when it becomes chilled. I can't stop eating it. It's crunchy and chewy and healthy. Ingredients:
2 cups cooked short-grain brown rice, cooled |
fresh dill, gently plucked |
fresh parsley, gently plucked |
1 raw fresh ear of corn, scaled |
1 carrot, finely chopped |
1 large scallion, chopped |
2 lemons, juice of |
salt and pepper |
all purpose seasoning, i use simply organics |
lemon |
olive oil |
Directions:
1. Mix all ingredients in a bowl. Refrigerate till serving. |
