This recipe comes from the Texas Beef Council. A change from the usual popper recipes. Ingredients:
1 1/2 pounds beef flank steak |
1/2 cup picante sauce (medium or hot is best) |
12 whole jalapeno peppers, halved lengthwise and seeded |
1/4 cup onion and chive or herb flavored cream cheese |
toothpicks |
Directions:
1. Slice beef into 1/4 inch thick strips, about 4 inches long. (Freezing beef for 20 or so minutes will help in slicing.) Cut across the grain holding the knife at an angle. 2. Marinate beef strips in picante sauce for one hour, chilled. 3. Fill each jalapeno pepper half with 1/2 teaspoon cream cheese. 4. Wrap filled peppers with one steak strip, covering cream cheese as your wrap. Fasten with toothpick. 5. Grill or broil 4 inches from heat source for 2 minutes. Turn and cook an additional 2 minutes. |
