Dutch Oven Upside-down Cake

If you need a yummy dessert while cooking on that outdoor campfire, give this a try. This is one of the desserts I'm asked to fix.
Ingredients:
1 (16-oz) can sliced pineapple
2 tbsp. margarine
1 small jar maraschino cherries
1/2 cup packed brown sugar
1 (2-layer) package yellow cake mix
Directions:
1. Drain pineapple, reserving juice.
2. Line Dutch oven with foil.
3. Grease foil with margarine.
4. Arrange pineapple and cherries on foil.
5. Sprinkle brown sugar and 3 Tbsp. reserved juice over fruit.
6. Prepare cake mix using package directions.
7. Pour over fruit.
8. Place cover on Dutch oven.
9. Place 1-inch above hot coals.
10. Top with hot coals.
11. Bake for 25-30 minutes or until cake tests done.
12. Cool for 10 minutes.
13. Invert onto platter; Peel off foil.
