Found this in a magazine...tried it this morning and loved it. Thought I would share with everyone.
Ingredients:
2 tablespoons unsalted butter, room temperature
3 large eggs
3/4 cup whole milk
1/2 cup all purpose flour
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1/4 c sugar
Directions:
1. Preheat oven to 425. In a medium cast iron or non stick skillet, melt 2 tablespoons butter over medium heat.
2. In a blender, combine eggs, milk, flour, salt, vanilla, and sugar. Blend until foamy for about a minute. Pour batter into skillet.
3. Bake until pancake is puffed and lightly brownded, about 20 minutes.
