This has become our Saturday morning, after a trip to the gym, breakfast. It is light and easy to make. We top ours with fat free sour cream, a sprinkle of brown sugar, and strawberries (if you have tried this set of toppings on pancakes or waffles, you've got to try it) but you can just as easily use syrup and butter or crumbled bacon and grated cheese. Read more . Whipped cream, fried apples, and caramel sauce is tasty too. Any fresh fruit or canned pie filling is great. Ingredients:
3 eggs |
2/3 c flour |
2/3 c milk or buttermilk |
1/4 teas vanilla extract |
1/8 teas ground cinnamon |
1/8 teas grated nutmeg |
1/8 teas salt |
2 t butter |
sour cream or plain yogurt- we use fat free but any work |
brown sugar |
strawberries- fresh or frozen (any berries or fruit that you like will work) |
Directions:
1. Preheat oven to 450 F 2. Using an electric beater, beat the eggs until they are light in color and foamy. 3. Add the milk, vanilla, flour, cinnamon, nutmeg, and salt to the eggs and beat until smooth 4. Melt the butter in a 10 cast iron skillet or other oven proof skill, swirling to coat the edges. 5. Pour the batter into the frying pan and place in the oven. 6. Bake for 18-24 minutes until golden. It will puff up and then the middle with fall when it is taken out of the oven. 7. Then cool for 5 minutes cut into quarters. 8. Serve 2 quarters per person topped with sour cream, brown sugar, and strawberries to taste. 9. Experiment with toppings - fruit is always good, whipped cream is traditional. Crumbled sausage, ham, or bacon topped with grated Gouda cheese is great too. You can't go wrong with syrup. |
