This is a Dutch /German . It is a light, airy pancake.Have everyone waiting at the table. Best when right out of oven before it deflates too much It looks like a pancake with sides .From Byzantine Fathers Recipe Book 1993. Ingredients:
4 tbsp. butter |
3 eggs |
1/2 cup milk |
1/2 cup bread flour ( works the best ) can use all-purpose |
1/4 tsp salt |
1/8 tsp vanilla |
1/8 tsp nutmeg or cinnamon or both |
confectioners' sugar |
lemon juice |
Directions:
1. Heat oven to 425 degrees 2. In a 10 in. cast-iron skillet,put in the butter. 3. Place in oven until butter melts & starts to sizzle. 4. Meanwhile, combine eggs, milk, flour, salt, cinnamon, nutmeg until almost smooth, should be sl. lumpy. 5. When butter in frying pan is hot & starting to sizzle ,either carefully remove pan from oven or (very carefully),pour in batter while in oven. 6. Bake until puffed & golden brown about 15 or 20 min. 7. Take out & serve immediately after sprinkling with confectionary sugar and drizzle lemon juice on top. Can use maple syrup, pancake syrup or fruit topping if desired 8. Makes 3 or 4 servings |
