This easy apple bread is a little different with it's crumb topping - kind of like a dutch apple pie. Originally from Dorothy Dean Cookbook (Spokesman Review). Ingredients:
1/4 cup shortening |
1 cup sugar |
2 eggs |
2 tablespoons milk |
1/2 teaspoon vanilla |
2 cups flour |
2 teaspoons baking powder |
1/2 teaspoon salt |
1 cup apple; peeled and grated |
1/4 cup nuts; chopped |
topping |
1 tablespoon sugar |
1 1/2 tablespoons flour |
1/2 teaspoon cinnamon |
dash salt |
Directions:
1. Combine 1 tablespoon sugar, 1 1/2 tablespoons flour, cinnamon and dash salt, set aside and reserve for use as crumb topping. 2. Cream shortening and 1 cup sugar. 3. Add eggs, milk and vanilla; beat well. 4. Sift remaining dry ingredients; stir into creamed mixture along with apples and nuts. 5. Turn into greased 9x5 loaf pan; let stand 30 minutes. 6. Sprinkle reserved crumb topping over batter. 7. Bake at 350 degrees for 55 minutes or until done. 8. Remove from pan and cool on rack. 9. Chill before slicing. |
