This is how to make a home version of the famous dressing that was created in the late 1800's. Ingredients:
1/2 cup cold water |
4 tablespoons corn starch |
1/2 cup + 2 tablespoons balsamic vinegar, or other dark vinegar |
1/2 cup sugar |
1 egg |
4 tablespoons mustard |
4 tablespoons unsalted butter |
2 tablespoons + 2 teaspoons salt |
Directions:
1. Put all ingredients, except butter, into a blender. 2. Blend at high speed for 2 minutes. 3. Pour into the top of a double boiler. 4. Cook over gently boiling water, stirring until warmed. 5. Add butter and stir to incorporate the butter. 6. Cook an additional 12-15 minutes. 7. Pour into a jar with a tight-fitting lid. 8. Bring to room temperature and refrigerate until ready to use. |
