DURANGO POTATO SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Montgomery Estate in The Woodlands, Texas in 1988. Ingredients:
2 pounds small red potatoes |
10 ounce can diced tomatoes with green chilies |
1/2 cup mayonnaise |
2 tablespoons spicy brown mustard |
1 cup chopped celery |
2 green onions sliced |
3 slices cooked bacon crumbled |
Directions:
1. In a large saucepan boil potatoes in enough water to cover 15 minutes. 2. Drain and cool slightly then cut into quarters. 3. Meanwhile in a large bowl combine tomatoes, mayonnaise and mustard. 4. Add potatoes, celery, green onions and bacon then toss to coat. 5. Cover and refrigerate 1 hour. |
