Dumplings With Tomatoes And Zucchini

Ingredients:
1/4 cup chopped onion
2 tablespoons oil
4 large tomatoes; chopped
1 tablespoon minced fresh basil or 1 teaspoon dried basil
1 teaspoon sugar
1 teaspoon salt
1/4 teaspoon pepper
2 medium zucchini; peeled and cubed
parmesan dumplings
1 egg; lightly beaten
1 cup grated parmesan cheese
Directions:
1. Saute onion until tender. Add tomatoes, basil, sugar, salt and pepper. Cover; simmer 20 minutes. Add zucchini and continue to cook until tender, about 15 minutes. Combine eggs and cheese. Drop by tablespoonfuls onto tomatoes. Cover; simmer until dumplings are firm, about 5 minutes.
