Dulche De Leche Cheesecake |

I had a jar of Dulche De Leche that I wanted to use up, so I experimented with this recipe. My co-workers, aka guinea pigs, say it's a winner! Ingredients:
1 1/4 c. graham crumbs |
1/4 c. margerine |
2 t. brown sugar |
3 pkgs. cream cheese |
3 eggs |
4 1/2 tbsp. graham cracker crumbs |
1 450 g. jar dulche de leche |
1/4 c. brown sugar |
toffee bits, about 1/2 cup. |
Directions:
1. Combine crumbs, margerine and first amount of brown sugar. Press onto bottom of 10 springform pan. Bake at 350º 10 minutes. Reduce oven to 325º. 2. Beat cream cheese with 1/4 c. brown sugar and eggs until well combined. Add in graham crumbs and dulche de leche, beating well. Stir in toffee bits. 3. Pour over crust, and bake approx. 1 hour and 10 minutes, until edges are set and center is still a little jiggly. 4. Remove from oven, immediately run a sharp bladed knife around edges to prevent cracking. 5. Cool, and top 6. I topped mine with a caramel sauce (caramel apple dip, actually), but it would be really good with a chocolate ganache spread over, then sprinkled with additional toffee bits, I think. |
