A great soup for people tired of turkey soup after every Thanksgiving, but still like vegetable-meat soups. When you buy a duck, it'll probably feed 2, and you'll have an amazing amount of meat left hidden on the carcass. Read more . Don't waste it! Make soup!
Ingredients:
duck carcass
1 can stewed chopped tomatoes
3 celery
1 yellow onion
1 cup lentils
fresh rosemary
garlic salt
kosher salt
oregano
bay leaves
black pepper
basil
Directions:
1. Boil duck carcass in about 1 gallon of water for 1-1.5 hours
2. remove carcass by draining the broth over a colander and catching the bones and meat in it
3. remove bones from meat, and set meat aside
4. place broth back into pot.
5. Chop and add vegetables and spices to broth
6. while the vegetables are cooking on low-med, chop the pieces of duck, and return to soup.
7. Simmer for about an hour. Don't overcook or it'll be mushy.
