hot dog casings stuffed with duck meat. Ingredients:
6 lb boneless duck meat and fat |
2 tbsp salt |
2 tsp five-spice blend |
half pound pine nuts, or pistachios, toasted |
marinated sun-dried tomatoes drained and chopped |
1/2 tsp dried thyme |
Directions:
1. Cut the meat and fat into cubes small enough to fit into the grinder. 2. Chill thoroughly. 3. Grind the meat once with the medium die. 4. Mix the salt, spices, nuts, and sun-dried tomatoes. 5. Add to the ground meat and mix thoroughly by hand. 6. Stuff into small hog casings. 7. Refrigerate or freeze until you want to use them. 8. Makes 6 pounds |
