Wild Game Pate Ingredients:
3 large game ducks |
3 stalks celery,cut into pieces |
1 onion,cut in pieces |
1-1/2 teaspoons salt |
1/4 teaspoon fresh ground black pepper |
4 stalks of celery,cut in pieces |
4 green onions,cut in pieces |
1 sweet green pepper,chopped |
2 tablespoons lemon juice |
1 tablespoons worcestershire sauce |
1/4 teaspoon hot sauce |
3/4 teaspoons salt |
1/2 cup mayonnaise |
Directions:
1. Combine first 5 ingredients in a large stock pot. 2. Cover,bring to a boil,reduce heat and simmer about 1 hour or until ducks are tender. 3. Remove ducks from stock,cool,remove meat from bones. 4. Grind meat ,celery,green onion,and green pepper,in food proccessor,stir in remaining ingredients. 5. Spoon into a 1 quart mold. 6. Chill overnight. 7. Unmold and serve with whole wheat Wafers |
