Duck Key remained uninhabited until the 1950s, when a man named Bryan W. Newkirk developed the island into one of the first planned communities in the Florida Keys. Although a salt works briefly operated in low-lying areas in the 1830s, the island was mostly swamp and mangroves when Newkirk brought it. Now, more than half a century later, 2 1/2 billion yards of fill, 4 miles of flow-through canals, and the vision of one man has turned Duck Key (mile marker 61) into one of the most desirable keys in the island chain. NOTE: Prep time does not include overnight refrigeration. Ingredients:
1 quart orange juice |
1/4 cup lemon juice |
1/4 cup sugar |
1/4 cup crushed mint leaf, plus 6 whole sprigs |
9 ounces dark rum |
seltzer water or club soda |
Directions:
1. Place orange juice, lemon juice, sugar and crushed mint leaves in a large covered container. Stir to mix well. Refrigerate overnight. 2. In each of 6 large tulip glasses filled with ice, place 1 1/2 ounces rum, 6 ounces orange juice mixture, and a splash of seltzer. Stir to mix. Garnish with a sprig of mint. 3. NOTE: You can make this drink with vodka instead of rum, for an equally tasty but different libation. |
