Duck, Feta And Basil Pizza |

Another accidental dish based on leftovers and a few things that were just screaming to be used in a recipe. The result is a crispy, flavorful pizza that can easily be a main dish, or an appetizer for the game. Ingredients:
1/2 - 3/4 cup cooked duck meat |
1/4 loaf of italian bread |
2 slices tomato, chopped |
2 t olive oil |
1/4 cup, or about 4 oz feta cheese |
1/4 cup torn basil leaves |
shredded parmesan |
s&p to taste |
Directions:
1. Preheat oven to 365 2. Cut the quarter loaf in half, the long way 3. Drizzle some olive oil on both halves See Photo 4. Spread basil on both halves equally 5. Layer crumbled feta and tomato See Photo 6. Break, or cut duck into small pieces, and layer on top 7. Sprinkle parmesan on top of both halves 8. Drizzle more olive oil over both 9. Salt and Pepper to taste 10. Bake for approximately 12 minutes, or until the parmesan is fully melted |
