Now this potato Salad has a change of pace to it Chilled Corn Beef and some Cabbage. Sorce Better Homes and Garden cook book Printed 1966. Ingredients:
1 tps. each celery seed and mustard seed |
2 tbs. vinegar |
3 cups warm diced cooked potatoes |
2 tps. sugar 1/2 tps. salt |
1 12-ounce can corned beef, chilled and diced |
2 cups finely shredded crisp cabbage |
1/4 cup finely chopped dill pickle |
1/4 cup chopped green onion |
3/4 cup mayonnaise |
2 tbs. milk |
1tbs. vinegar |
1/2 tps. salt |
Directions:
1. Soak celery and mustard seeds in 2 Tbs. vinegar; drizzle over warm potatoes. Sprinkle with sugar and 1/2 tps.salt. Chill. Add meat, cabbage, pickle, and onions. Mix remaining ingredients, pour over potato mixture; toss lightly. |
