Makes a great dessert topping. Ingredients:
1 20oz can unsweetened pineapple chunks |
1/4 cup sugar-or to taste |
1 teaspoon vanilla extract |
2 tablespoons dark rum-or to taste |
Directions:
1. Drain pineapple(save juice for another purpose) and place in medium mixing bowl. 2. Toss with sugar, vanilla, and rum. 3. Cover and refrigerate overnight. 4. Serve over ice cream, pound cake, or enjoy plain. |
