These are fantastic. My sister-in-law who is a great cook shared this recipe with me several years ago. We now have this on a very frequent basis. It's also good with pinto beans. Ingredients:
1/2 pound bacon diced |
2 onions diced |
2 cloves garlic diced |
6 cups cooked black beans |
2 teaspoons salt |
1 teaspoon freshly ground black pepper |
1 teaspoon toasted cumin seed |
12 ounce can dark beer |
Directions:
1. Cook bacon in a deep stockpot over medium heat for 4 minutes. 2. Stir in onions and garlic and sauté 5 minutes. 3. Add beans, salt, pepper, cumin and beer then simmer 25 minutes. 4. Serve warm. |
