Ingredients:
1 1/3 cups pitted dried plums
3/4 cup prune juice
1/3 cup water
2 teaspoons orange peel, grated
1 cup toasted wheat germ
3/4 cup whole wheat flour
1/2 cup unbleached all-purpose flour
147 g (2/3 cup) brown sugar, packed
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large egg whites
1/2 cup chopped pecans
Directions:
1. Heat oven to 350 degrees. Lightly coat 8 1/2 x 4 1/2 inch loaf pan with cooking spray; set aside.
2. In small saucepan, bring dried plums, prune juice and water to a boil. Transfer dried plum mixture to food processor or blender; process until smooth. Stir in orange peel and set aside.
3. In large bowl, combine wheat germ, flours, brown sugar, baking powder, baking soda and salt; stir to blend thoroughly.
4. Mix in dried plum mixture, egg whites and pecans until thoroughly blended.
5. Spread batter in pan; bake in center of oven about 50 minutes or until wooden pick inserted in center comes out clean. Cool in pan 10 minutes. Turn onto rack to cool completely.
