Dried Peach Rice Pudding

From my food preservation group.
Ingredients:
1/2 cup uncooked white rice
1/2 cup sugar
1 cup finely chopped dried peaches
4 cups milk
1/4 teaspoon ginger
1/4 teaspoon salt
Directions:
1. Combine all ingredients in 2 quart casserole.
2. Bake, uncovered, in a 325 degree F. oven for 2 1/2 hours, or until rice is tender. Stir occasionally as it cooks.
3. Cool. Pudding thickens and becomes creamy as it cools.
