From the Sunday Express , a recipe by Anthony Worrall Thompson for a baked fruit breakfast. Ingredients:
125 g prunes (stoned) |
125 g dried apricots |
125 g dried apple rings |
75 g raisins |
3 bananas, peeled and sliced |
4 cardamom pods, split |
2 tablespoons honey |
1 orange, zest of |
1 lemon zest |
2 oranges |
125 ml water |
Directions:
1. Combine prunes, apricots and apple rings in a bowl and cover with boiling water. 2. Cover and soak overnight. 3. After soaking preheat oven to 350°F. 4. Drain fruit. 5. Place fruit onto a baking dish and add raisins, banana and cardamom pods. 6. Juice 2 oranges, reserve. 7. In a seperate dish combine remaining ingredients with the water and pour over fruit. 8. Mix well and bake for 35 minutes then stir in the juice of the 2 oranges and serve warm. |
