Dried Fruit Compote with Goat Cheese (Sandra Lee) |

Ingredients:
1 1/2 cups port wine |
1/4 cup sugar |
1 cup mixed dried fruit, chopped |
1/2 cup dried cranberries |
4 ounces crumbled goat cheese |
sparkling italian wine, for serving |
Directions:
1. In a small saucepan over medium-high heat, simmer port wine and sugar until sugar has dissolved. Add dried fruit and dried cranberries. Bring mixture to a boil. Reduce heat and simmer for 5 minutes. Remove from heat and let cool. 2. Serve in martini glasses topped with crumbled goat cheese and a glass of sparkling Italian wine. |
