A low fat version of the original. The cherry gives it an extra kick, without the extra calories. Ingredients:
2 cups all-purpose flour |
1 tsp baking powder |
1/2 tsp baking soda |
1/2 cup buttermilk |
1 egg white |
1 egg |
2/3 cup splenda no calorie sweetener, granular |
1 cup dried cherries, roughly chopped |
1/3 cup canola oil |
1/3 cup dry milk, nonfat |
1/2 tsp almond extract |
2 tbsp sugar (this is optional) |
Directions:
1. Preheat oven to 350 degrees F. With baking spray, spray a cookie sheet (or jellyroll pan) then place aside. Mix the egg white and egg in a large sized mixing bowl. Combine the buttermilk, SPLENDA Granular, canola oil, nonfat dry milk and almond extract, mix thoroughly. Then, add baking powder, baking soda and flour to the mixture and mix until just blended. Now, add the dried cherries, blend well. Spoon 12 evenly sized mounds of batter onto the baking sheet or pan. Lightly drizzle with sugar (optional) and bake for 10-15 minutes. |
