Just 1/4 cup of this chutney contains 3 grams of fiber. Ingredients:
1 cup water, divided |
1 cup coarsely chopped dried apricot |
1 cup coarsely chopped onion |
1/3 cup cider vinegar |
1/3 cup raisins |
1 1/4 teaspoons pumpkin-pie spice |
1 teaspoon dry mustard |
1/8 teaspoon crushed red pepper |
1 cup peeled, coarsely chopped golden delicious apple |
Directions:
1. Combine 1/2 cup water, apricot, and next 6 ingredients (apricot through red pepper) in a medium saucepan, and stir well. Bring to a boil. Cover; reduce heat. Simmer 20 minutes, stirring occasionally. Add 1/2 cup water and apple. Cook, covered, an additional 15 minutes or until apple is tender. Remove from heat; uncover and let stand 5 minutes before serving. 2. Note: Refrigerate remaining chutney in an airtight container for up to 1 week. |
