Another family favorite-it's requested at every get-together. I think the recipe is from the Best of Bridge series-I got it from my aunt. It's great for potlucks/bbqs & very easy to double or triple (using one of those big foil pans). Enjoy!! Ingredients:
5 medium potatoes |
1/2 lb bacon (cut in 1-to-2 pieces) |
1 large onion, sliced |
1 (8 ounce) bottle creamy italian dressing or 1 (8 ounce) bottle creamy cucumber salad dressing |
1/2 cup grated swiss cheese (or sub another cheese--i often use cheddar) |
Directions:
1. Peel potatoes& chop in chunks& boil 20-min. or until just barely cooked. 2. Drain. 3. Fry bacon until crisp; onion till soft (in same pan). 4. Grease a 4-cup casserole. 5. Layer potatoes with bacon-onion mixture. 6. Pour dressing over all. 7. Sprinkle cheese over top. 8. Bake in pre-heated 325 F oven for one hour OR until bubbly. 9. Creamy Italian dressing will give a bit more of a bite. 10. Creamy Caesar is also very good. |
