Ingredients:
4 large cucumbers, unpeeled and thinly sliced |
2 small onions, separated into rings |
2 medium-size green peppers, chopped |
1/4 cup chopped fresh parsley |
1 cup apple cider vinegar |
1 cup water |
1/4 cup sugar |
1 tablespoon salt |
1/2 teaspoon pepper |
lettuce leaves |
Directions:
1. Combine first 4 ingredients in a shallow dish; toss lightly. 2. Combine next 5 ingredients, mixing well. Pour over vegetables, tossing to coat well. Cover and chill at least 2 hours. Drain and serve in a lettuce-lined bowl. |
