These heavenly little cheesecakes are easy and delicious! Great for a party! Makes 6 dozen. From Party Recipes from the Charleston Junoir League. Ingredients:

1 1/2 pounds cream cheese, at room temperature |
1 1/2 t vanilla extract |
1 c sugar |
5 eggs |
topping |
1 pint sour cream |
1/4 c sugar |
1 t vanilla extract |
muffin pans and cupcake liners |
Directions:
1. FILLING 2. Preheat oven to 350 3. Line 1 1/2 in muffin tins with paper liners 4. Place cream cheese and 1 1/2 t vanilla in large bowl and cream with electric mixer 5. Add sugar and eggs and mix well 6. Spoon approximately 1 T of the filling into the prepared muffin tins and bake until the tops crack (they will not brown), about 20 minutes 7. TOPPING 8. Combine all ingredients in a medium bowl and mix well with electric mixer 9. Spoon a small amount of topping onto each cheesecake 10. Bake about 5 min 11. Let cool and refrigerate until ready to serve |
