This is a different type of pie...Its more of an ole timey pie....My grandmother used to make pies like this... Ingredients:
9 inch unbakes pastry shell |
2 eggs |
3/4 cup sugar |
1 cup cottage cheese, sieved |
1 cup buttermilk |
2 tablespoons melted butter |
2 tablespoons flour |
2 teaspoons vanilla |
1/2 teaspoon grated lemon zest |
1 tablespoon lemon juice |
raspberry or strawberry jam |
Directions:
1. Beat eggs and sugar until thick. 2. Use a large wooden spoon to press cottage cheese through sieve, then measure. 3. Add with rest of ingredients except jam; beat with mixer until well blended. 4. Pour into unbaked pastry shell. 5. Bake in oven 375 degrees below the center of the oven for 45 minutes or until filling is just firm in the center. 6. Cool. 7. Top each serving with a spoonful of jam, or sweetened fresh berries. |
