Dr. Bateman's Brown Sugar Sauce |

This recipe is from Dr. Evelyn Bateman, found in a 1965 fundraising cookbook for Toronto's Women's College Hospital. She says it's foolproof, easy and tasty . Ingredients:
1 cup brown sugar |
3 tablespoons flour |
1/2 cup cold water |
1/2 cup dry white wine |
3 tablespoons cream |
1 tablespoon butter, soft |
1/2 teaspoon vanilla extract |
1 dash salt |
1/3 cup toasted, chopped almonds |
Directions:
1. In a medium-sized heavy saucepan, whisk together the brown sugar, flour, cold water and wine until mixture is a smooth paste. 2. Over medium heat, cook until mixture is thick and clear, whisking frequently. 3. Whisk in cream, butter, vanilla, salt and nuts, if using. 4. Sauce is ready when butter melts. |
