This dish just warms my heart and fills my thoughts with loving memories of holidays at home. Hope you like it as well as I do. It's a two step cooking method... stove top to oven. Forgive my timing it's a little off on prep. Read more . time Ingredients:
1 c. uncooked rice |
1 c. water |
3 -4 c. milk |
1 tsp. salt |
1/4 cup sugar |
2 eggs, beaten ( put in a bowl and set aside) |
grated rind of 1/2 a lemon |
1/3 c. raisins |
1 tsp. vanilla extract |
fine dried bread crumbs |
1 t. butter |
Directions:
1. Heat rice in water 2. Add 3 cups of milk, salt and sugar 3. Cover and simmer for 40 minutes or until rice is tender 4. Add more milk if necessary to keep rice from becoming dry 5. Stir frequently during cooking 6. Remove from heat 7. Add 1/2 cup of cooked rice to the beaten eggs 8. Transfer rice/egg combo to the rest of the mixture 9. Add lemon rind, raisins and vanilla 10. Butter a 1 1/2 quart casserole dish (bottom and sides) and cover bottom and sides with bread crumbs 11. Pour rice mixture into casserole 12. Dot with butter and sprinkle with crumbs 13. Place in a preheated 325 F oven for 30 minutes or until set 14. Cool and unmold 15. * For a added sweet treat , serve with strawberries, raspberries or a stewed fruit |
