Doves in Cornbread Stuffing |

From The Fish & Wild Game Cookbook Ingredients:
1/2 cup chopped celery |
1/4 cup sliced green onion |
2 tablespoons snipped fresh parsley |
1/4 cup butter |
3 cups cornbread stuffing mix |
1 cup chicken broth |
1/2 teaspoon marjoram leaves |
1/2 teaspoon salt |
1/8 teaspoon pepper |
8 whole boneless dove breasts |
Directions:
1. Heat oven to 350°F. 2. Lightly grease a 2 quart casserole dish. 3. Over medium heat, cook and stir celery, onions, and parsley in butter until tender. 4. Add stuffing mix and remaining ingredients (except dove breast). 5. Mix until moist. 6. Place half of mixture in the bottom of casserole dish. 7. Arrange breasts on top. 8. Cover breasts completely with remaining stuffing mixture. 9. Bake uncovered until tender. 10. About 1 hour. |
