This recipe for homemade doughnuts is excellent. These are perfect for anytime of year but I usually make them for Hanukkah. Ingredients:
yeast mixture |
1-1/2 cups warm water |
1-3/4 ounces fresh yeast |
1 tbsp. granulated sugar |
doughnut ingredients |
3 eggs |
1/2 cup oil |
1/2 cup sugar |
1/2 cup non dairy creamer |
1 tsp. vanilla extract |
1 tsp. lemon peel, grated |
6 - 7 cups of all-purpose flour |
oil for frying |
confectioners' sugar and cinnamon |
note: if i'm in the mood i will add some finely diced apple to the mixture. |
Directions:
1. Use a 2 quart saucepan. 2. Place eggs, oil, sugar, nondairy creamer, vanilla, and grated lemon peel in a large mixing bowl. 3. Add yeast mixture and flour until soft dough is formed. 4. Note: This dough should not be dry. 5. Knead the dough for a few minutes. 6. Cover and allow it to rise in a warm place until doubled, about 1-1/2 hours. 7. Roll out dough 1/2 inch thick on floured surface. 8. Cut out circles with a doughnut cutter. 9. Place 3 - 4 inches oil in a 2 quart saucepan and heat over a medium-high heat until hot. 10. Place no more than 4 doughnuts in the oil at a time. 11. Brown on one side, then turn to brown on the other. 12. Remove with a slotted spoon. 13. Drain and cool on paper towels. 14. Dust with a mixture of confectioners' sugar and cinnamon. 15. *To test if dough is ready for rolling, place a small piece in a glass of water - if the dough floats to the top, it is ready. 16. Makes 5 - 6 dozen depending on the size. |
