Double-the Cream Cheese Pound Cake |

A really delicious pound cake! Ingredients:
2 pkgs cream cheese (8 oz each) |
1 1/4 c butter (2 1/2 sticks) |
2 1/4 c sugar |
1/2 t salt |
6 eggs |
3 c cake flour |
1 t lemon extract |
1/2 t vanilla flavor |
* 1/2 t lemon juice (optional..i was going for a stronger lemony flavor!) |
Directions:
1. Preheat oven to 350 degrees; butter & flour 12-cup Bundt cake pan (I used a generous spraying of Baker's Joy..works like a charm!) 2. Beat together first 4 ingredients with electric mixer until smooth & creamy. 3. Add eggs one at a time, alternating with the cake flour. 4. Blend in extracts. 5. Pour into cake pan & bake at 350 degrees for 30 minutes. 6. Reduce heat to 320 degrees & bake an additional 40-45 minutes. 7. Remove cake pan from oven & place on cooling rack. Allow cake to cool before turning out onto plate. |
