Double-Onion Smashed Potatoes |

This recipe features sauteed shallots and red onion. For richer mashed potatoes, without added fat, use buttery-tasting Yukon Gold potatoes to make this side dish. Ingredients:
1 1/2 lbs small red potatoes, quartered |
3 tablespoons butter |
1/2 cup red onion, chopped |
1/2 cup shallot, chopped |
2 tablespoons fresh parsley, chopped |
1/2 cup milk |
1/2 teaspoon salt |
1/4 teaspoon fresh ground black pepper |
Directions:
1. In large pot, combine potatoes with enough salted water to cover. 2. Bring to boil; cook until tender, 20 minutes. 3. Drain; return to pot. 4. Meanwhile, in skillet, melt 1 T butter over medium heat. 5. Add onion and shallots, cook stirring, until tender, 5 minutes. 6. Remove from heat; stir in parsley. 7. Reserve. 8. In microwave-safe bowl, microwave milk and remaining butter on high 30-60 seconds until hot. 9. Add milk mixture, salt and pepper to potatoes; mash. 10. Reserve 2 T onion mixture, stir remainder into potatoes. 11. Serve potatoes topped with reserved onion mixture. |
