I found this at Eagle Brand and had to share! There are so many of us Eagle Brand and lemon lovers here. Ingredients:
1 (18.25- to 18.5-ounce) package lemon cake mix |
1 (14-ounce) can eagle brand® sweetened condensed milk (not evaporated milk) |
2 egg yolks |
1/2 cup lemon juice |
1 teaspoon grated lemon rind (optional) |
yellow food coloring (optional) |
Directions:
1. Preheat oven to 350°F. 2. Prepare and bake cake mix as package directs for 13x9-inch cake. 3. Beat EAGLE BRAND® and egg yolks. 4. Stir in lemon juice, lemon rind and food coloring (optional). 5. Spread evenly over hot cake. 6. Return to oven; bake 8 minutes longer. 7. Cool. Chill. Garnish as desired. 8. Store leftovers covered in refrigerator. |
