This is another possibility for healthier choices for these yummy cookies.
Ingredients:
2 cups whole wheat flour
2 tsp ground ginger
1 tsp baking soda
1/4 tsp salt
3/4 c smart balance omega plus - stick
1/2 c splenda brown (plus the following measurements to equal 1-1/3 c sugar)
2 tbsp splenda brown
2 tsp splenda brown
1/4 cup egg beaters
1/4 cup agave syrup
2 tbsp candied ginger, finely chopped - plus..
2 tbsp fresh ginger, finely chopped
Directions:
1. Cream butter substitute and Splenda, add egg beaters, agave and chopped ginger. Combine dry ingredients and mix in well. Form into small balls (about 1 to 1-1/4 ) and roll in sugar.
2. Bake at 350 for 12 minutes - take out when dry on top, but still very soft. Best when still warm - will get firmer as they cool.
3. Makes about 3 dozen. 1 serving = 2 cookies
