YUMMY, easy potato dish from Betty Crocker's Cooking for Two over 40 years ago. Made this right after my husband and I were married and its STILL one of our favs. Ingredients:
4 medium potatoes, peeled and sliced into 1/4 slices |
1 cup boiling water |
4 medium carrots, cut into sticks |
2 teaspoons salt |
2 tablespoons milk |
2/3 cup american cheese, grated (i just dice finely slices of american) |
Directions:
1. Place potatoes in water in saucepan with carrots on top. Sprinkle with salt. Cover and cook over medium heat about 5 minutes. Reduce heat 20-25 minutes. When veggies are tender, drain and add milk - sprinkle with grated cheese. Replace cover; turn off heat and let cheese melt. |
