1 tsp baking soda |
1/4 tsp salt |
1/2 cup vegetable shortening |
1/2 cup light brown sugar |
1/2 cup sugar |
1 egg |
1/2 tsp vanilla extract |
1 cup cornflakes |
1 cup rolled oats |
6 oz semisweet chocolate chips |
1/2 cup confectioners' sugar |
3 oz cream cheese, at room temperature |
Directions:
1. Preheat oven to 350 degrees. 2. Sift together the flour, baking soda and salt. 3. With an electric mixer, cream the shortening, brown sugar and sugar until light and creamy. Add the egg and vanilla and beat well. Add flour mixture. 4. Blend in the cornflakes and oats. 5. Divide dough into two pieces, one twice as large as the other. Shape the large piece into balls around 3/4 inch in diameter. Shape the smaller piece into the same amount of smaller balls. Flatten all balls to 1/4 inch in thickness. 6. Bake 9 to 12 minutes, until golden. Let sit on baking sheets for 5 minutes. Transfer to cooling rack. 7.
