Double Corn Tortilla Casserole |

A great side dish for your next cookout. Ingredients:
8 corn tortillas |
1 1/2 c. shredded monterey jack or pepperjack cheese |
1 c. frozen whole kernel corn |
4 green onions, sliced |
2 egs |
1 c. buttermilk |
1 (4oz) can diced green chilies |
Directions:
1. Preheat oven to 325 degrees. 2. Spray a 2 quart baking dish with nonstick cooking spray. 3. Tear tortillas into bite-size pieces. Arrange 1/2 of the tortilas in the baking dish. Top with 1/2 of the cheese, 1/2 the corn and 1/2 the onions. Repeat layering with remaining tortillas, cheese, corn and onions. 4. Stir together eggs, butermilk and chilies. Gently pour over the tortilla mixture. Bake uncovered in a 325 degree oven for 30 minutes. Serve warm. |
