Double Chocolate Zucchini Cake |

This is a great way to squeeze in those veggies. Even the kids will love eating zucchini this way. Moist and chocolaty! Ingredients:
1/2 cup butter or margarine, softened |
1 3/4 cup sugar |
1/2 cup vegetable oil |
2 eggs |
1/4 cup milk |
1/4 cup sour cream |
1 tsp vanilla |
2 1/2 cups flour |
1/2 tsp baking powder |
1/2 tsp baking soda |
4 tbs. baking cocoa |
1/2 tsp cinnamon |
1/2 tsp ground cloves |
2 cups finely shredded zucchini |
1 cup chocolate chips |
Directions:
1. Mix butter, sugar and oil until blended. Add eggs, vanilla, milk and sour cream; beat well with mixer. 2. Combine dry ingredients and add to egg mixture, beating well. Stir in shredded zucchini. Turn into greased, floured, 3. 9 x 13 inch pan and sprinkle with chocolate chips. 4. Bake at 350 degrees for 40 - 45 minutes or until cake tests done. |
