Double Chocolate Mint Chip Cookies |

Ingredients:
1 1/2 cups mint chocolate chips |
1/2 cup brown sugar, firmly packed |
1 1/4 cups unbleached flour |
1/4 cup granulated sugar |
3/4 teaspoon baking soda |
1/2 teaspoon vanilla extract |
1/2 teaspoon salt |
1 large egg |
1/2 cup butter, softened |
1/2 cup nuts, chopped |
Directions:
1. Preheat oven to 375°F. 2. Melt over hot (not boiling) water, 3/4 cup of the mint-chocolate chips; stir until smooth. 3. Remove from heat; cool to room temperature. 4. In a small bowl, combine flour, baking soda and salt; set aside. 5. In a large bowl, combine butter, brown sugar, sugar, and vanilla extract; beat until creamy. 6. Add melted chips and egg; beat well. 7. Gradually blend in the flour mixture. 8. Stir in remaining 3/4 cup of mint-chocolate chips and nuts. 9. Drop by rounded tablespoonfuls onto ungreased cookie sheets. 10. Bake at 375° for 8-10 minutes. 11. Allow to stand 2-3 minutes; remove from cookie sheets. 12. Cool completely on wire racks. |
