Double Chocolate Macadamia Nut Muffins |

These muffins are a lovely combination of sweet and salty with a great crunch from the nuts. They originally come from the Australia's Womens' Weekly Muffins and Scones cookbook, but I have modified them a bit. I hope youll enjoy them as much as we do! :) Ingredients:
300 g flour |
3 teaspoons baking powder |
1/4 teaspoon salt |
150 g sugar |
5 tablespoons oil |
180 ml milk |
1 egg, beaten |
70 g white chocolate, chopped |
70 g dark chocolate, chopped (i used 70% cocoa chocolate) |
75 g macadamia nuts, chopped (roasted and salted slightly) |
Directions:
1. Combine flour, baking powder, sugar and salt in a big bowl. 2. In a second bowl combine egg, oil and milk. Add this to the dry ingredients. 3. Fold in chocolate chunks and chopped nuts. 4. Spoon batter into prepared muffin tin and bake in the preheated oven at 180°C/350°F for about 25 minutes or muffins are nicely browned on top and a toothpick inserted in the centre comes out clean. |
